Chopped Broccoli Salad

Amazingly Easy and Delicious Raw Broccoli Salad


This raw broccoli salad is easy and delicious. Use the cuisinart to process the carrots and broccoli, then add everything else! I estimate less than 30 minutes to prepare..

For those of you who are following the LEAP diet, all ingredients in this salad are LEAP-tested with the exception of pumpkin seeds and cilantro.  I made one change to the original recipe with the addition of 2 tablespoons  of olive oil. I highly recommend adding the oil for a more balanced flavor. You can also mix it up by using your favorite chopped nuts or add other seeds such as sesame or hemp seeds. I did not have cilantro so just used parsley. Conversely, if you just have cilantro, omit the parsley.



1 bunch of broccoli, cut into florets
2 medium carrots, peeled and cut into chunks
1-2 celery ribs, finely chopped
1/3 cup mix of sunflower seeds and pepitas
1/4 cup raisins
1/4 cup dried cranberries
a handful of chopped parsley
a handful of chopped cilantro
juice of 1 lemon
1-2 tablespoons maple syrup
salt and pepper

In a food processor, finely chop the broccoli and carrots until they become rice-like in texture. (If you don’t have a food processor, chop the broccoli and carrots with a knife as small as you can get them.) Mix with other ingredients in a large bowl and season with salt and pepper.
