During a recent visit to Louisville, KY, we ate at The Grape Leaf, a wonderful Mediterranean restaurant with many gluten-free and vegetarian options. The Babronia dish was so delicious, and fortunately I was able to locate the recipe online. Do yourself a favor and double the recipe. It includes lots of vegetables, beans, simple herbs and spices cooked in tomato sauce and assembles quickly. Enjoy over your favorite grain, cauliflower rice, black bean pasta, or as is.
