No Greens Salad

People often assume that salad means some type of lettuce or leafy greens, tomato, cucumber, and perhaps green peppers. Think outside the lettuce box and enjoy delicious salads made from any raw vegetables in your refrigerator. This particular salad includes chopped carrots, cauliflower, green pepper, red cabbage, avocado, scallions, cilantro, mint, and parsley. Other great options: tomatoes, radishes, jicama, sugar snap peas, celery, kohlrabi, fennel.
Make an easy and tasty dressing by using the juice of a fresh lemon, some olive oil, sea salt, ground pepper, and a splash of grade B maple syrup.
Tasty extras to add include any chopped nuts, seeds, capers, olives, chopped dill pickles, one or two chopped dates, or a handful of other dried fruit.
