Quick Red Lentil Dal With Coconut Milk

Red lentils are small in size but pack a powerhouse of nutrition—these tiny legumes are both high in protein and high in slow-digesting carbohydrates and fiber. These petite red lentils are rich in folate, iron, potassium, phosphorus, magnesium, and zinc. Red lentils cook quickly, making this dal easy to prepare.  You can either omit the coconut milk, use light coconut milk, or do as I do and use the full fat coconut milk. Adding this healthy fat to the lentils balances the macronutrient content (protein, carbohydrates, fat) and greatly enhances the texture and flavors.
